Ginger Trout

Ingredients:

  • 5 T vegetable oil          

  • 2 c. peeled, julienne ginger  (approx 1/2 lb.)

  • 1 1/2 lb. trout fillets, cut into 1/4" strips

  • 3 1/2 T sugar

  • 2 T soy sauce

  • 2 T fish sauce

  • 1 tsp. salt

  • 1 large. sweet onion (Spanish), thinly sliced

  • 1/4 red bell pepper, julienne

  • 1/2 bunch green onions, cut into 1” pieces

Illustrated Dinner

Directions:

Heat oil in a skillet over medium-high heat.  Add ginger, stirring until brown and crisp.  Add fish, stir gently.  Cook for about 3 min.  Add next 5 ingredients, stir well. Add onion, cook for 3-4 min, then add red pepper and scallions.  Cook for 2 min.
