Ginger Trout
Ingredients:

5 T vegetable oil

2 c. peeled, julienne ginger (approx 1/2 lb.)

1 1/2 lb. trout fillets, cut into 1/4" strips

3 1/2 T sugar

2 T soy sauce
-
2 T fish sauce
-
1 tsp. salt
-
1 large. sweet onion (Spanish), thinly sliced

1/4 red bell pepper, julienne
-
1/2 bunch green onions, cut into 1” pieces
Directions:
Heat oil in a skillet over medium-high heat. Add ginger, stirring until brown and crisp. Add fish, stir gently. Cook for about 3 min. Add next 5 ingredients, stir well. Add onion, cook for 3-4 min, then add red pepper and scallions. Cook for 2 min.
